Pumpkin Cookies with Brown Butter Frosting

1 cup pumpkin puree

2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

½ teaspoon ground ginger

½ teaspoon allspice

½ teaspoon salt

1 cup granulated sugar

½ cup brown sugar

½ cup unsalted butter, softened

1 large egg

1 teaspoon vanilla extract

For the Brown Butter Frosting:

½ cup unsalted butter

2 cups powdered sugar

2 tablespoons milk

1 teaspoon vanilla extract

Pinch of salt

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a medium bowl, whisk together the flour, baking soda, baking powder, spices (cinnamon, nutmeg, ginger, allspice), and salt. Set aside.

      In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.

        Add the pumpkin puree, egg, and vanilla extract into the butter-sugar mixture and mix until well combined.

          Gradually add the dry ingredients into the pumpkin mixture, mixing until just combined.

            Using a cookie scoop or tablespoon, drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.

              Bake in the preheated oven for 12-15 minutes or until the edges are light golden brown. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

                For the frosting, melt the ½ cup of unsalted butter in a saucepan over medium heat. Continue cooking until the butter turns golden brown and has a nutty aroma (about 5-7 minutes). Be sure to stir frequently to avoid burning.

                  Remove the browned butter from heat and let it cool slightly. In a mixing bowl, whisk together the browned butter, powdered sugar, milk, vanilla extract, and a pinch of salt until smooth and creamy. Adjust the milk or sugar consistency if necessary.

                    Once the cookies are completely cool, spread or pipe the brown butter frosting onto each cookie.
