Ingredients

1 cup mashed ripe bananas (about 2-3 bananas)

1 cup pure pumpkin puree (canned or fresh)

1/2 cup granulated sugar

1/4 cup brown sugar, packed

1/2 cup vegetable oil or melted coconut oil

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon ground ginger

1/2 cup chopped walnuts or pecans (optional)

1/2 cup chocolate chips (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan or line it with parchment paper for easy removal.

Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, pumpkin puree, granulated sugar, brown sugar, oil, eggs, and vanilla extract. Mix until well combined and smooth.

Combine Dry Ingredients: In another bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.

Combine Mixtures: Gradually add the dry mixture to the wet mixture, stirring just until combined. Be careful not to overmix—the batter should be slightly lumpy. If using, gently fold in the chopped nuts and chocolate chips.

Pour and Bake: Pour the batter into the prepared loaf pan, smoothing the top with a spatula. Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean.

Cool: Allow the loaf to cool in the pan for about 10-15 minutes, then transfer it to a wire rack to cool completely.

Slice and Serve: Once cooled, slice the loaf into thick pieces and serve. This delicious loaf pairs perfectly with a smear of butter or cream cheese!
