Ingredients

3 cups cooked macaroni pasta

2 cups pulled pork (leftover or freshly made)

1 cup BBQ sauce (your choice)

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup sour cream

1/2 cup diced onions

1/2 cup diced bell peppers (red or green)

1 tsp garlic powder

1 tsp smoked paprika

1/2 tsp black pepper

1/2 tsp salt

1/4 cup fresh parsley, chopped (for garnish)

1/2 cup breadcrumbs (optional, for topping)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Prepare the Base: In a large bowl, combine the cooked macaroni pasta, pulled pork, BBQ sauce, sour cream, diced onions, diced bell peppers, garlic powder, smoked paprika, black pepper, and salt. Mix everything until the pasta and pork are evenly coated with the sauce.

Cheese It Up: Fold in half of the shredded cheddar and mozzarella cheese into the mixture. This will give your casserole a cheesy interior.

Assemble the Casserole: Spread the macaroni and pulled pork mixture into a greased 9x13 inch baking dish. Sprinkle the remaining cheeses over the top. If desired, sprinkle breadcrumbs over the cheese for added crunch.

Bake: Place the casserole in the preheated oven and bake for 25 to 30 minutes, or until the cheese is bubbly and golden brown on top.

Garnish & Serve: Once baked, remove the casserole from the oven and let it sit for about 5 minutes. Garnish with fresh parsley before serving.

Enjoy: Serve hot, and enjoy a deliciously unique blend of flavors that bring together the smoky pulled pork and creamy macaroni!
