Puff Pastry Breakfast Pizza

Ingredients
  

1 sheet of puff pastry, thawed

4 large eggs

1 cup shredded mozzarella cheese

1/2 cup cherry tomatoes, halved

1/2 cup cooked breakfast sausage, crumbled

1/4 cup bell peppers, diced (any color)

1/4 cup red onion, finely chopped

1 tsp olive oil

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

1/2 tsp dried oregano

Instructions
 

Preheat your oven to 400°F (200°C).

    On a lightly floured surface, roll out the puff pastry into a rectangle, about 1/4 inch thick. Transfer it to a parchment-lined baking sheet.

      Use a knife to score a border around the edges of the puff pastry, about 1 inch from the edge, making sure not to cut all the way through.

        Prick the inner rectangle of dough with a fork to prevent it from puffing up too much while baking.

          In a skillet over medium heat, add olive oil and sauté the red onion and bell peppers until they are softened, about 3-4 minutes.

            Spread the sautéed vegetables evenly over the inner rectangle of the puff pastry.

              Sprinkle the crumbled breakfast sausage on top, followed by the halved cherry tomatoes.

                Carefully crack the eggs on top of the assembled ingredients, spacing them evenly.

                  Season everything with salt, pepper, and dried oregano.

                    Sprinkle the shredded mozzarella cheese over the entire pizza, being sure to cover the eggs.

                      Bake in the preheated oven for about 20-25 minutes, or until the puff pastry is golden brown and the eggs are cooked to your desired doneness.

                        Remove from the oven and let cool for a few minutes. Garnish with fresh basil leaves if desired.

                          Slice and serve warm!
