12 mini sweet bell peppers

1 cup cream cheese, softened

½ cup shredded cheddar cheese

¼ cup crumbled feta cheese

2 tablespoons fresh parsley, chopped

1 tablespoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

½ teaspoon crushed red pepper flakes (optional for heat)

1 tablespoon olive oil

Fresh parsley for garnish (optional)

Prep the Peppers: Preheat your oven to 375°F (190°C). Slice the mini peppers in half lengthwise and remove the seeds. Arrange them cut side up on a baking sheet lined with parchment paper.

    Make the Filling: In a mixing bowl, combine the softened cream cheese, cheddar cheese, feta, parsley, garlic powder, onion powder, salt, pepper, and crushed red pepper flakes if using. Mix until well combined and creamy.

      Stuff the Peppers: Using a spoon or a small pastry bag, generously fill each mini pepper half with the cheese mixture. Press the filling down gently to pack it in.

        Bake: Drizzle the stuffed peppers with olive oil. Bake in the preheated oven for about 20-25 minutes, or until the peppers are tender and the tops are slightly golden.
