4 medium-sized potatoes (Russet or Yukon Gold), diced

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon salt

1 bell pepper (any color), diced

1 onion, diced

Prepare the Potatoes: Wash and peel (if desired) the potatoes. Dice them into small, even-sized pieces to ensure they cook uniformly.

    Create the Foil Packets: Cut four large pieces of aluminum foil, approximately 12 inches long. Create a flat surface by overlapping two pieces of foil and folding down the center to strengthen it.

      Season the Ingredients: In a large bowl, combine the diced potatoes, corn, bell pepper, onion, olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper. Toss everything together until the vegetables are evenly coated with the oil and seasonings.

        Assemble the Packets: Divide the potato mixture evenly among the four pieces of foil. Gather the edges of the foil and fold them over several times to seal each packet tightly, while leaving some space inside for steam to build.

          Cooking Methods:

            - Grill: Preheat the grill to medium-high heat. Place the foil packets on the grill, and cook for about 25-30 minutes, turning once halfway through.

              - Oven: Preheat your oven to 400°F (200°C). Place the foil packets on a baking sheet and cook for about 30-35 minutes, or until the potatoes are tender.

                Check for Doneness: Carefully open one of the foil packets after cooking; the potatoes should be fork-tender. If they require more time, reseal and return to the heat for another 5-10 minutes.
