1.5 lbs pork tenderloin

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

1 teaspoon salt

½ teaspoon black pepper

1 cup chicken broth

3 tablespoons Dijon mustard

2 tablespoons honey

1 tablespoon apple cider vinegar

1 teaspoon fresh rosemary, chopped (optional)

Fresh parsley, for garnish

Instructions
 

Prepare the Pork: Preheat your oven to 400°F (200°C). Pat the pork tenderloin dry with paper towels to ensure a good sear.

    Season the Meat: In a small bowl, mix together the garlic powder, onion powder, thyme, salt, and black pepper. Rub this mixture evenly over the pork tenderloin.

      Sear the Pork: In an oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the pork tenderloin and sear on all sides until golden brown, about 2-3 minutes per side.

        Make the Sauce: Once the pork is seared, remove it from the skillet and set aside. Lower the heat to medium and add the chicken broth, scraping up any brown bits from the bottom of the pan. Stir in the Dijon mustard, honey, apple cider vinegar, and optional rosemary. Allow the mixture to simmer for about 5 minutes until slightly thickened.

          Combine and Roast: Return the pork tenderloin to the skillet, spooning some of the sauce over the top. Transfer the skillet to the preheated oven and roast for about 20-25 minutes, or until the internal temperature reaches 145°F (63°C). Baste the pork with the sauce halfway through cooking.

            Rest and Serve: Remove the skillet from the oven and let the pork rest for 5-10 minutes before slicing. Serve the sliced pork drizzled with the mustard sauce and garnished with fresh parsley.
