When it comes to choosing the right cut of pork for grilling, pork steaks are an excellent choice. Typically cut from the pork shoulder or the loin, these steaks are well-marbled, which translates to flavor and juiciness when cooked. The shoulder cut offers a richer taste, while the loin cut provides a leaner option with a slightly milder flavor. Both cuts are versatile and can absorb marinades beautifully, ensuring that they are packed with flavor before they even hit the grill.

Ingredients

4 pork steaks (about 1 inch thick)

4 cloves garlic, minced

2 tablespoons fresh rosemary, finely chopped

2 tablespoons fresh thyme, finely chopped

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon salt

1/2 teaspoon black pepper

Juice of 1 lemon

Lemon wedges (for serving)

Fresh parsley, chopped (for garnish)

Instructions

In a small bowl, combine minced garlic, chopped rosemary, thyme, olive oil, smoked paprika, salt, black pepper, and lemon juice. Mix well to create a marinade.

Place the pork steaks in a large resealable plastic bag or a shallow dish. Pour the marinade over the pork, ensuring each piece is well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes (or up to 4 hours for more flavor).

Preheat your grill or grill pan over medium-high heat. If using a grill, oil the grates to prevent sticking.

Remove the pork steaks from the marinade, allowing excess to drip off. Discard the marinade.

Grill the pork steaks for about 4-5 minutes per side, or until they reach an internal temperature of 145°F (63°C) and have nice grill marks.

Once cooked, remove the steaks from the grill and let them rest for 5 minutes to allow juices to redistribute.

Slice the pork steaks and serve with lemon wedges and a sprinkle of fresh chopped parsley for garnish.
