Pork Chops with Mushroom Gravy

4 bone-in pork chops (about 1 inch thick)

Salt and black pepper to taste

1 tablespoon olive oil

2 tablespoons unsalted butter

1 small onion, finely chopped

3 cloves garlic, minced

8 ounces mushrooms, sliced (button or cremini)

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1 cup chicken broth

1 cup heavy cream

1 tablespoon Worcestershire sauce

1 tablespoon soy sauce

1 tablespoon chopped fresh parsley (for garnish)

Instructions
 

Prepare the Pork Chops: Season both sides of the pork chops generously with salt and black pepper.

    Sear the Chops: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the pork chops and sear for about 4-5 minutes on each side or until they are golden brown and cooked through. Remove the chops from the skillet and place them on a plate. Cover with foil to keep warm.

      Make the Mushroom Gravy: In the same skillet, lower the heat to medium and add the butter. Once melted, add the chopped onion and cook until it becomes translucent, about 3-4 minutes. Then, add the minced garlic and cook for an additional 1-2 minutes until fragrant.

        Add the Mushrooms: Add the sliced mushrooms to the skillet and cook until they are browned and softened, about 5-7 minutes. Stir in the fresh thyme and season with salt and pepper to taste.

          Create the Sauce: Pour in the chicken broth, scraping the bottom of the skillet to release any brown bits. Let the broth simmer for about 3-4 minutes. Reduce the heat to low and stir in the heavy cream, Worcestershire sauce, and soy sauce. Allow to simmer gently for another 5 minutes until the sauce thickens slightly.

            Combine: Return the pork chops to the skillet, spooning the gravy over them. Let them warm through in the sauce for about 2-3 minutes.

              Serve: Plate the pork chops and generously ladle the creamy mushroom gravy over the top. Garnish with chopped fresh parsley before serving.
