Pork Chops with Creamy Bacon Pan Sauce

4 boneless pork chops (about 1 inch thick)

Salt and pepper, to taste

2 tablespoons olive oil

4 slices of thick-cut bacon, chopped

1 small onion, finely diced

3 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

1 teaspoon Dijon mustard

1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)

1 tablespoon fresh parsley, chopped (for garnish)

Prep the Pork Chops: Pat the pork chops dry with paper towels. Season both sides generously with salt and pepper.

    Cook the Bacon: In a large skillet over medium heat, add the chopped bacon. Cook until crispy, about 6-8 minutes. Once cooked, remove the bacon with a slotted spoon and set aside on a plate lined with paper towels, leaving the rendered bacon fat in the skillet.

      Sear the Pork Chops: Increase the skillet heat to medium-high. Add the olive oil to the bacon fat. When the oil is hot, add the pork chops to the skillet. Sear for about 4-5 minutes per side, until golden brown and cooked through (internal temperature should reach 145°F). Once cooked, transfer the pork chops to a warm plate and cover with foil to keep warm.

        Make the Creamy Sauce: In the same skillet, reduce the heat to medium and add the diced onion. Sauté for about 3-4 minutes until softened. Stir in the minced garlic and cook for an additional minute until fragrant.

          Deglaze the Pan: Add the chicken broth to the skillet, scraping up any browned bits from the bottom. Let it simmer for about 2-3 minutes to reduce slightly.

            Add Cream and Flavor: Reduce the heat to low, then stir in the heavy cream, Dijon mustard, thyme, and the reserved bacon. Simmer the sauce for 3-4 minutes until it thickens slightly. Taste and adjust seasoning with salt and pepper if necessary.

              Serve: Return the pork chops to the skillet, spooning the creamy sauce over them to coat. Allow them to warm for 1-2 minutes. Garnish with fresh parsley before serving.
