Ingredients

1 pound ground beef or turkey

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

2 cups cooked rice (white or brown)

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon paprika

Salt and pepper to taste

1 cup shredded cheddar cheese

Optional: Fresh cilantro for garnish

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Cook the Meat: In a large skillet over medium heat, add the ground beef or turkey. Cook until browned, breaking it apart with a wooden spoon as it cooks, about 5-7 minutes. Drain excess fat if needed.

Add Aromatics: Add diced onion and minced garlic to the skillet with the cooked meat. Sauté until the onion is translucent, about 3-4 minutes.

Combine Ingredients: Stir in the black beans, corn, diced tomatoes, cooked rice, chili powder, cumin, paprika, and season with salt and pepper. Mix well until all ingredients are uniformly incorporated.

Transfer to Casserole Dish: Pour the mixture into a greased casserole dish, spreading it evenly.

Cheese It Up: Sprinkle the shredded cheddar cheese evenly over the top of the casserole.

Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbly and slightly golden.

Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with chopped cilantro if desired. Serve warm and enjoy!
