Poor Man's Husband Casserole

Ingredients
  

1 pound ground beef or turkey

1 medium onion, chopped

2 cloves garlic, minced

1 can (15 oz) mixed vegetables, drained (or 2 cups fresh vegetables)

1 can (10.5 oz) cream of mushroom soup

1 cup beef broth

1 cup cooked rice (white or brown)

1 teaspoon Worcestershire sauce

1 teaspoon Italian seasoning

Salt and pepper to taste

1 cup shredded cheddar cheese

1 cup tater tots or potato chips for topping

Fresh parsley or chives for garnish (optional)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large skillet over medium heat, brown the ground beef or turkey, breaking it apart with a spatula. Drain excess fat if necessary.

      Add chopped onion and minced garlic to the meat, cooking until the onion is translucent and fragrant (about 3-4 minutes).

        Stir in the mixed vegetables, cream of mushroom soup, beef broth, cooked rice, Worcestershire sauce, Italian seasoning, salt, and pepper. Mix well until combined.

          Transfer the mixture into a greased 9x13 inch baking dish. Spread evenly.

            Sprinkle shredded cheddar cheese over the top of the casserole.

              If using tater tots, arrange them evenly on top of the cheese, or alternatively, crush potato chips and scatter them over the cheese for a crispy topping.

                Bake in the preheated oven for about 30-35 minutes, or until the cheese is melted and bubbly and the top is golden brown.

                  Allow to cool for 5 minutes before serving. Garnish with chopped parsley or chives if desired.
