1 cup shelled unsalted pistachios

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

3/4 cup granulated sugar

1/2 cup unsalted butter, softened

3 large eggs

1 teaspoon vanilla extract

1/2 cup buttermilk

1/4 teaspoon cardamom (optional for extra flavor)

Instructions
 

Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan and set aside.

    Place the shelled pistachios in a food processor and pulse until coarsely chopped (about 5-6 pulses). Reserve a handful for topping later.

      In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cardamom (if using). Set aside.

        In a large mixing bowl, cream the softened butter and sugar together using an electric mixer on medium speed until light and fluffy (about 3-4 minutes).

          Add the eggs one at a time, mixing well after each addition. Incorporate the vanilla extract.

            Gradually add the flour mixture to the wet ingredients, alternating with the buttermilk, starting and ending with the flour mixture. Mix until just combined.

              Fold in the chopped pistachios, being careful not to overmix.

                Pour the batter into the prepared loaf pan and smooth the top with a spatula. Sprinkle the reserved pistachios on top for garnish.

                  Bake in the preheated oven for about 55-65 minutes, or until a toothpick inserted into the center comes out clean.

                    Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
