Ingredients

For the Cake:

2 cups all-purpose flour

1 ½ cups granulated sugar

½ cup unsalted butter, softened

1 cup crushed pineapple, drained

3 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

1 teaspoon baking soda

½ teaspoon salt

½ cup buttermilk

For the Coconut Cream Frosting:

1 cup heavy whipping cream

1 cup powdered sugar

1 teaspoon vanilla extract

½ cup sweetened shredded coconut

For the Topping:

Fresh pineapple slices

Extra shredded coconut

Maraschino cherries (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Combine Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

Cream Butter and Sugar: In another bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.

Add Eggs and Vanilla: Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

Incorporate Pineapple: Fold in the crushed pineapple into the butter mixture, ensuring it’s evenly distributed.

Mix Dry and Wet Ingredients: Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Start and finish with the flour mixture. Mix until just combined, avoiding over-mixing.

Bake the Cakes: Divide the batter evenly between the two prepared pans. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.

Prepare the Frosting: In a mixing bowl, whip the heavy cream until soft peaks form. Gradually add the powdered sugar and vanilla extract, whipping until stiff peaks form. Gently fold in the shredded coconut.

Assemble the Cake: Once completely cooled, place one cake layer on a serving plate. Spread a generous layer of coconut cream frosting on top. Place the second cake layer over the frosting and cover the top and sides with the remaining frosting.

Decorate the Cake: Garnish with fresh pineapple slices, extra shredded coconut, and Maraschino cherries if desired.

Serve and Enjoy: Slice and serve your delicious Pineapple Heaven Cake to friends and family. Enjoy this tropical delight on any occasion!
