1 cup all-purpose flour

1 cup granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, softened

3 large eggs

1 teaspoon vanilla extract

1 cup crushed pineapple, drained, juices reserved

1/2 cup shredded coconut

1/2 cup chopped walnuts (optional)

1 can (8 oz) whipped topping (like Cool Whip)

1/4 cup powdered sugar

Fresh pineapple slices and cherries, for garnish

Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

    Combine Dry Ingredients: In a large mixing bowl, sift together the flour, baking powder, baking soda, and salt.

      Cream Butter and Sugar: In another bowl, beat the softened butter and granulated sugar until light and fluffy using a hand mixer or stand mixer.

        Add Eggs and Vanilla: Add eggs one at a time to the butter mixture, mixing well after each addition. Stir in the vanilla extract.

          Mix with Dry Ingredients: Gradually add the dry ingredients into the butter mixture, alternating with the reserved pineapple juice. Mix until just combined.

            Fold in Pineapple, Coconut, and Walnuts: Gently fold in the crushed pineapple, shredded coconut, and chopped walnuts if using. Pour the batter into the prepared cake pan.

              Bake: Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

                Cool the Cake: Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

                  Prepare the Topping: In a medium bowl, combine the whipped topping and powdered sugar, mixing until smooth.
