2 cups all-purpose flour

1 ½ cups granulated sugar

1 cup unsalted butter, softened

4 large eggs

1 cup crushed pineapple, drained

1 tsp vanilla extract

½ tsp baking powder

½ tsp baking soda

½ tsp salt

1 cup shredded coconut (optional)

1 cup cream cheese, softened

1 cup powdered sugar

2 cups whipped cream

Fresh pineapple slices and mint for garnish

Instructions
 

Prepare the Cake Batter: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

    Add Eggs and Flavorings: Beat in the eggs one at a time, then stir in the vanilla extract and drained crushed pineapple.

      Mix Dry Ingredients: In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined. If using, fold in the shredded coconut.

        Bake the Cake: Divide the batter evenly between the two prepared cake pans. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.

          Prepare the Cream Cheese Frosting: In a medium bowl, beat the cream cheese until smooth. Gradually add the powdered sugar and mix until creamy.

            Assemble the Cake: Once cooled, place one layer of the cake on a serving platter. Spread half of the cream cheese frosting on top. Place the second layer on top and frost the top and sides with the remaining cream cheese frosting.
