3 large eggs

1 teaspoon vanilla extract

1/2 cup crushed pineapple, drained

1/2 cup shredded coconut (sweetened or unsweetened, based on your preference)

1/2 cup coconut milk

1/2 teaspoon coconut extract (optional)

Zest of 1 lime (for added flavor)

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.

    Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set this mixture aside.

      Cream Butter and Sugar: In a large mixing bowl, use an electric mixer to cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.

        Add Eggs and Flavorings: Beat in the eggs one at a time, mixing well after each addition. Then, add the vanilla extract and coconut extract (if using) and lime zest, mixing until just combined.
