2 cups all-purpose flour

2 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup unsalted butter, softened

2 cups granulated sugar

4 large eggs

1 teaspoon vanilla extract

1 cup buttermilk

1 cup crushed pineapple, drained

1 cup sweetened shredded coconut

1/2 cup chopped pecans (optional)

1 cup cream cheese, softened

4 cups powdered sugar

1/4 cup coconut milk

Fresh pineapple slices and toasted coconut for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

      Cream Butter and Sugar: In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy, about 4-5 minutes.

        Add Eggs and Vanilla: Beat in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.

          Combine with Buttermilk: Gradually add the flour mixture to the butter mixture, alternating with the buttermilk. Start and end with the dry ingredients, mixing just until combined.

            Fold in Fruits and Nuts: Gently fold in the crushed pineapple, shredded coconut, and chopped pecans (if using) until evenly distributed.

              Bake the Cake: Divide the batter evenly between the prepared cake pans and smooth the tops. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.

                Cool the Cakes: Once baked, let the cakes cool in the pans for 10 minutes before transferring them to wire racks to cool completely.

                  Prepare the Frosting: In a medium bowl, beat the cream cheese until smooth. Add the powdered sugar and coconut milk, mixing until creamy and fluffy.

                    Assemble the Cake: Place one cake layer on a serving plate. Spread a generous layer of cream cheese frosting on top, then place the second layer on top. Frost the top and sides of the entire cake.

                      Garnish: Decorate the top with fresh pineapple slices and a sprinkle of toasted coconut.
