1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

2 cups fresh pineapple chunks (or canned, drained)

1 red bell pepper, sliced

1 green bell pepper, sliced

1 medium onion, sliced

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

3 tablespoons soy sauce (low sodium, if preferred)

1 tablespoon oyster sauce (optional)

1 tablespoon honey or agave syrup

2 tablespoons vegetable oil (or olive oil)

1 teaspoon cornstarch mixed with 2 tablespoons water (to thicken)

Salt and pepper, to taste

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions
 

Prepare the Chicken: In a bowl, season the chicken pieces with salt, pepper, and half of the soy sauce. Let marinate for 15 minutes while you prepare the vegetables.

    Heat Oil: In a large skillet or wok, heat vegetable oil over medium-high heat. Add the marinated chicken and cook for about 5-7 minutes, or until lightly browned and cooked through. Remove chicken from the skillet and set aside.

      Stir-Fry Vegetables: In the same skillet, add the sliced onion, bell peppers, garlic, and ginger. Stir-fry for 3-4 minutes until they start to soften.

        Add Pineapple & Sauce: Add the pineapple chunks back to the skillet along with the remaining soy sauce, oyster sauce (if using), honey, and cooked chicken. Stir well to combine.

          Thicken the Sauce: Pour in the cornstarch mixture, and stir continuously until the sauce thickens, about 1-2 minutes. Adjust seasoning with salt and pepper to taste.

            Serve: Remove from heat and garnish with chopped green onions and sesame seeds.

              Enjoy: Serve hot over rice or noodles for a wholesome meal.
