Ingredients
  

2 cups jasmine rice

1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup fresh pineapple chunks (or canned)

1 red bell pepper, diced

1 green bell pepper, diced

1 medium onion, chopped

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1/4 cup soy sauce

2 tablespoons honey

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 teaspoon chili flakes (adjust to taste)

2 tablespoons vegetable oil

Salt and pepper to taste

Green onions, sliced (for garnish)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Cook the Rice: Rinse the jasmine rice under cold water until the water runs clear. In a pot, combine 2 cups of water and the rinsed rice. Bring it to a boil, then reduce heat to low, cover, and simmer for about 15 minutes until the rice is cooked and has absorbed all the water. Fluff with a fork and set aside.

    Prepare the Chicken: In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Season the chicken pieces with salt and pepper. Add them to the skillet and cook, stirring frequently, until the chicken is golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add a bit more oil if necessary. Add the chopped onion, diced red and green bell peppers, garlic, and ginger. Sauté for 3-4 minutes, or until the vegetables are softened.

        Add Pineapple and Sauce: Stir in the pineapple chunks. In a small bowl, mix together the soy sauce, honey, rice vinegar, sesame oil, and chili flakes. Pour this mixture over the vegetables and stir well. Bring to a simmer for about 2 minutes.

          Combine Everything: Add the cooked chicken back to the skillet, and toss everything together to combine and heat through for another 2-3 minutes. Adjust seasoning if necessary.

            Serve: Spoon the pineapple chicken mixture over a bed of jasmine rice. Garnish with sliced green onions and chopped cilantro. Serve with lime wedges on the side for a fresh zing.
