2 boneless, skinless chicken breasts, diced

1 cup long-grain white rice

1 cup chicken broth

1 cup fresh pineapple, diced (reserve a few pieces for garnish)

1 medium red bell pepper, diced

1 small onion, finely chopped

3 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon honey

1 tablespoon olive oil

1 teaspoon ground ginger

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional, for heat)

1/4 cup green onions, sliced (for garnish)

Instructions
 

Marinate the Chicken: In a bowl, combine the diced chicken breasts with soy sauce, honey, ginger, black pepper, and red pepper flakes. Let it marinate for at least 15 minutes.

    Cook the Rice: In a medium saucepan, combine rice and chicken broth. Bring to a boil, reduce heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and the liquid is absorbed. Fluff with a fork and set aside.

      Sauté Vegetables: In a large skillet, heat olive oil over medium-high heat. Add the chopped onion and cook until it becomes translucent (about 3-4 minutes). Add minced garlic and red bell pepper, sautéing for another 2-3 minutes until the pepper softens.

        Cook the Chicken: Add the marinated chicken to the skillet, cooking until golden brown and cooked through (approximately 6-8 minutes). Make sure the chicken is fully cooked with an internal temperature of 165°F (75°C).

          Combine with Pineapple: Stir in the diced pineapple and mix well to combine. Allow everything to cook together for about 2 minutes so the flavors meld.

            Mix with Rice: Add the cooked rice to the skillet, gently folding everything together until well mixed. Taste and adjust salt if necessary.

              Serve: Plate the Pineapple Chicken and Rice mixture, garnishing with reserved pineapple pieces and a sprinkle of sliced green onions.
