4 large russet potatoes

1 lb (450g) ribeye steak, thinly sliced

1 tablespoon olive oil

1 small onion, diced

1 green bell pepper, sliced

2 cloves garlic, minced

1 cup shredded provolone cheese

1/2 cup shredded cheddar cheese

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Optional: hot sauce or ketchup for serving

Prepare the Fries: Preheat your oven to 425°F (220°C). Wash the potatoes thoroughly, then cut them into thick fries. Toss the fries in a bowl with olive oil, salt, and pepper to coat evenly. Spread them out on a baking sheet in a single layer. Bake for about 25-30 minutes or until golden and crispy, flipping halfway through.

    Cook the Steak: While the fries are baking, heat a large skillet over medium-high heat. Add olive oil and sauté the diced onion for 2-3 minutes until translucent. Add the sliced ribeye steak, and season with salt and pepper. Cook for about 3-5 minutes until the steak is browned and cooked through, then add the sliced bell pepper and minced garlic. Sauté for an additional 2-3 minutes until the pepper is slightly tender.

      Combine and Melt Cheese: Once the fries are done, remove them from the oven and immediately layer the cooked steak mixture over the fries. Sprinkle the provolone and cheddar cheese on top, then return the baking sheet to the oven for another 5-7 minutes, or until the cheese is melted and bubbly.

        Serve: Remove from the oven, and let cool slightly. Garnish with chopped parsley and serve with your choice of hot sauce or ketchup.
