1 boneless prime rib roast (4-6 lbs)

4 cloves garlic, minced

2 tablespoons fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

2 tablespoons sea salt

1 tablespoon black pepper

2 tablespoons olive oil

1 teaspoon smoked paprika

1 cup beef broth

Prepare the Rub: In a medium bowl, combine minced garlic, chopped rosemary, thyme, sea salt, black pepper, olive oil, and smoked paprika. Mix well to form a paste.

    Season the Roast: Pat the prime rib roast dry with paper towels. Rub the seasoning paste all over the roast, ensuring an even coating. For best flavor, let the roast sit at room temperature for 1-2 hours before cooking.

      Preheat the Oven: Preheat your oven to 450°F (232°C).

        Roast the Prime Rib: Place the seasoned prime rib on a roasting rack in a pan. Roast in the preheated oven for 20 minutes, then reduce the temperature to 325°F (163°C) and continue roasting for approximately 1-1.5 hours. Use a meat thermometer to check for doneness: 120°F (49°C) for rare, 130°F (54°C) for medium rare, and 140°F (60°C) for medium.

          Basting (Optional): If desired, every 30 minutes, you can baste the roast with the drippings from the pan to enhance flavor and moisture.

            Resting the Meat: Once the desired doneness is reached, remove the roast from the oven and cover it loosely with aluminum foil. Let it rest for at least 20-30 minutes. This allows the juices to redistribute throughout the meat.

              Make the Gravy (Optional): While the roast is resting, pour the drippings from the roasting pan into a small saucepan, skim off excess fat, and add beef broth. Simmer for about 5-10 minutes, whisking occasionally, to create a flavorful gravy.

                Carve and Serve: Slice the prime rib against the grain into thick slices. Serve it with the optional gravy and garnish with fresh herbs if desired.
