1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

1 cup unsalted butter, softened

1 ½ cups granulated sugar

1 large egg

1 teaspoon vanilla extract

½ teaspoon peppermint extract

½ cup crushed peppermint candies (plus extra for garnish)

1 cup powdered sugar (for icing)

2 tablespoons milk (for icing)

½ teaspoon peppermint extract (for icing)

Preheat the Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

      Cream Butter and Sugar: In a large bowl, using an electric mixer, cream the softened butter and granulated sugar until light and fluffy (about 3-5 minutes).

        Add Egg and Extracts: Beat in the egg, vanilla extract, and peppermint extract until well combined.

          Incorporate Dry Ingredients: Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined. Avoid overmixing.

            Fold in Peppermint Candies: Gently fold in the crushed peppermint candies until evenly dispersed through the dough.

              Shape Cookies: Using a tablespoon, scoop out dough and roll it into balls. Place them on the prepared baking sheets, leaving some space between each cookie to allow for spreading.

                Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.

                  Cool: Allow cookies to cool on the baking sheet for 5 minutes, then transfer to wire racks to cool completely.

                    Prepare Icing: In a small bowl, mix the powdered sugar, milk, and ½ teaspoon peppermint extract until smooth. Adjust the consistency with more milk if necessary.

                      Decorate Cookies: Once the cookies are cool, drizzle the icing over each cookie and sprinkle with extra crushed peppermint candies.

                        Serve and Enjoy: Allow the icing to set for about 15 minutes before serving.
