1 lb (450g) flank steak, thinly sliced against the grain

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil (divided)

1 red bell pepper, sliced into strips

1 green bell pepper, sliced into strips

1 yellow bell pepper, sliced into strips

1 medium onion, sliced

3 cloves garlic, minced

1 teaspoon fresh ginger, grated

2 green onions, chopped (for garnish)

Cooked jasmine rice or steamed rice (for serving)

Instructions
 

In a medium bowl, combine sliced flank steak with soy sauce, oyster sauce, and cornstarch. Mix well to ensure the beef is evenly coated. Let it marinate for about 15-20 minutes.

    Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the marinated beef in a single layer. Allow it to sear undisturbed for about 2 minutes before stirring. Cook until just browned, about 3-4 minutes total. Remove the beef from the pan and set aside.

      In the same skillet, add the remaining tablespoon of vegetable oil. Add onions, bell peppers, garlic, and ginger. Stir-fry for about 4-5 minutes or until the vegetables are tender-crisp.

        Return the beef to the skillet with the vegetables. Stir to combine everything, cooking for another 2-3 minutes until heated through.

          Taste and adjust seasoning, adding more soy sauce if desired.

            Garnish with chopped green onions before serving. Serve hot over jasmine or steamed rice.
