1 cup brown sugar, packed

1/2 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup chopped pecans

1/2 cup mini chocolate chips (optional)

1/2 cup corn syrup

1 teaspoon maple extract

1/4 teaspoon ground cinnamon

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Prepare Cookie Dough: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. This usually takes about 2-3 minutes.

      Add Egg and Vanilla: Beat in the egg and vanilla extract until well combined.

        Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.

          Fold in Pecans and Chocolate Chips: Gently fold in the chopped pecans and mini chocolate chips (if using) until evenly distributed throughout the dough.

            Make Pecan Topping: In another bowl, mix together the corn syrup, maple extract, ground cinnamon, and a pinch of salt. This will be the gooey topping for your cookies.

              Assemble Cookies: Using a cookie scoop or tablespoon, drop balls of cookie dough onto the prepared baking sheet, leaving space between each ball (about 2 inches apart).
