Ingredients

For the Cupcake Batter:

1 ½ cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

¼ tsp salt

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 tsp vanilla extract

½ cup buttermilk

1 cup fresh peaches, diced

½ cup fresh raspberries

For the Peach Raspberry Frosting:

1 cup unsalted butter, softened

4 cups powdered sugar

2 tbsp heavy cream

1 tsp vanilla extract

½ cup peach puree (from fresh peaches)

¼ cup raspberry puree (from fresh raspberries)

Rainbow sprinkles (optional, for decoration)

Instructions

Prepare the Cupcakes:

    - Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.

      - In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.

        - In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. This should take about 3-5 minutes.

          - Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

            - Gradually add the dry ingredients to the wet ingredients, alternating with buttermilk, starting and ending with the flour mixture. Mix until just combined.

              - Gently fold in the diced peaches and raspberries, being careful not to overmix.

                Bake the Cupcakes:

                  - Divide the batter evenly among the prepared cupcake liners, filling each about 2/3 full.

                    - Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.

                      - Allow the cupcakes to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

                        Make the Frosting:

                          - In a medium bowl, beat the softened butter until creamy.

                            - Gradually add the powdered sugar, mixing until well combined. Add the heavy cream and vanilla extract, and beat until fluffy.

                              - Divide the frosting into two bowls. To one bowl, add the peach puree and mix until well combined. To the other bowl, mix in the raspberry puree.

                                - Alternate dollops of both peach and raspberry frostings on top of each cooled cupcake, and swirl them together for a marbled effect.

                                  Decorate and Serve:

                                    - If desired, sprinkle rainbow sprinkles on top for an extra pop of color.

                                      - Serve and enjoy your Peach Raspberry Heaven Cupcakes!
