Ingredients
  

1 pound ground beef

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (any color), diced

1 (14.5 oz) can diced tomatoes (with juices)

1 (15 oz) can tomato sauce

1 (15 oz) can kidney beans, drained and rinsed

2 cups elbow macaroni

4 cups beef broth

1 tablespoon Worcestershire sauce

1 teaspoon Italian seasoning

Salt and pepper to taste

1 cup shredded cheddar cheese (optional, for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot or Dutch oven, heat a splash of oil over medium heat. Add the ground beef and cook until browned, stirring occasionally to break it up, about 5-7 minutes. Drain excess fat.

    Add the diced onion, garlic, and bell pepper to the pot. Cook for an additional 4-5 minutes until the vegetables are softened.

      Stir in the diced tomatoes, tomato sauce, kidney beans, elbow macaroni, beef broth, Worcestershire sauce, and Italian seasoning. Bring the mixture to a boil.

        Once boiling, reduce the heat to low, cover, and let it simmer for about 20-25 minutes, stirring occasionally, until the macaroni is cooked al dente and the goulash is thickened.

          Season with salt and pepper to taste. If desired, stir in half of the shredded cheddar cheese until melted and creamy.

            Serve hot, garnished with the remaining cheese and chopped parsley.
