8 ounces spaghetti or your preferred pasta

2 tablespoons olive oil

3 cloves garlic, minced

8 ounces mushrooms, sliced (button or cremini)

4 cups fresh spinach, roughly chopped

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

1 cup heavy cream

1 cup grated Parmesan cheese

Zest of 1 lemon

Juice of 1/2 lemon

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

    Sauté Garlic and Mushrooms: In a large skillet over medium heat, heat the olive oil. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the sliced mushrooms and cook for 5-7 minutes or until they are browned and tender.

      Add Spinach and Seasonings: Stir in the chopped spinach, dried oregano, red pepper flakes (if using), and season with salt and pepper. Cook until the spinach wilts, about 2-3 minutes.

        Make the Cream Sauce: Lower the heat and add the heavy cream to the skillet. Bring it to a gentle simmer while stirring constantly. Gradually whisk in the grated Parmesan cheese until melted and creamy.

          Combine with Pasta: Add the cooked pasta directly into the skillet, tossing gently to combine all the ingredients. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

            Add Lemon: Stir in the lemon zest and juice, mixing well to incorporate all flavors.

              Garnish and Serve: Remove from heat, garnish with chopped parsley, and adjust seasonings if needed before serving.
