1 cup all-purpose flour

2 tablespoons sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 large egg

1 cup buttermilk (or milk with 1 tablespoon vinegar)

3 tablespoons unsalted butter, melted (plus extra for the pan)

1/2 teaspoon vanilla extract

Optional: fresh fruits, honey, or maple syrup for serving

Instructions
 

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.

    In a separate bowl, beat the egg and then add the buttermilk, melted butter, and vanilla extract. Mix until smooth.

      Pour the wet ingredients into the dry ingredients and stir gently. Be careful not to overmix; a few lumps are fine.

        Preheat a non-stick skillet or griddle over medium heat. Add a small amount of butter, allowing it to melt and coat the surface.

          For each pancake, ladle about 1/4 cup of batter onto the skillet. Let the pancake cook undisturbed for about 2-3 minutes or until you see bubbles forming on the surface.

            Carefully flip the pancake and cook for another 1-2 minutes until golden brown and crispy around the edges.

              Transfer to a plate and keep warm while you repeat with the remaining batter, adding more butter to the pan as needed.
