8 oz rice noodles

2 tbsp vegetable oil

2 cloves garlic, minced

1/2 cup firm tofu, cubed (or shrimp, if preferred)

1 egg, lightly beaten

2 cups bean sprouts

3 green onions, chopped

1/4 cup roasted peanuts, crushed

2 tbsp fish sauce (or soy sauce for a vegetarian option)

1 tbsp tamarind paste

1 tbsp sugar

Lime wedges, for serving

Fresh cilantro, for garnish

Instructions
 

Prepare the Noodles: Start by soaking the rice noodles in hot water for about 30-40 minutes until they are softened but still a little firm. Drain and set aside.

    Make the Sauce: In a small bowl, mix together the fish sauce, tamarind paste, and sugar. Stir until the sugar is dissolved. Set this sauce aside.

      Cook the Tofu (or Shrimp): In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the cubed tofu (or shrimp) and sauté until golden brown. Remove and set aside.

        Stir-fry Aromatics: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.

          Add Noodles and Sauce: Push the garlic to one side of the skillet, then add the drained rice noodles. Pour the prepared sauce over the noodles, tossing everything together gently to combine.

            Add Egg and Veggies: Make a well in the center of the noodles; pour in the beaten egg. Allow it to cook for about 1 minute, then scramble it into the noodles. Add the bean sprouts and green onions, continuing to stir-fry for another 2-3 minutes until the sprouts are slightly wilted.

              Combine Everything: Add the cooked tofu (or shrimp) back to the skillet. Toss everything well to ensure the noodles and veggies are evenly coated in the sauce and heated through.

                Serve & Garnish: Plate the Pad Thai and garnish with crushed peanuts, fresh cilantro, and additional lime wedges on the side. Enjoy your delicious homemade Pad Thai!
