4 medium russet potatoes, scrubbed and cut into wedges

1 large onion, sliced into thick rings

3 tablespoons olive oil

2 teaspoons garlic powder

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 425°F (220°C) and prepare a baking sheet by lining it with parchment paper for easy cleanup.

    In a large mixing bowl, combine the potato wedges and onion rings. Drizzle with olive oil and toss to coat evenly.

      Sprinkle the garlic powder, smoked paprika, dried oregano, salt, and pepper over the potatoes and onions. Toss again until all pieces are well-coated with the spices.

        Spread the potato and onion mixture onto the prepared baking sheet in a single layer, ensuring they are not overcrowded for maximum crispiness.

          Bake in the preheated oven for about 30-35 minutes, turning halfway through, until the potatoes are golden brown and crispy on the outside and tender on the inside.

            Remove from the oven and let cool for a few minutes. Garnish with freshly chopped parsley before serving.
