500g mixed organic mushrooms (such as cremini, shiitake, and button), cleaned and sliced

1 medium organic onion, finely chopped

2 organic garlic cloves, minced

3 tablespoons organic olive oil

4 cups organic vegetable broth

1 cup organic heavy cream or coconut cream for a dairy-free option

1 teaspoon organic thyme, dried

Salt and freshly ground pepper to taste

2 tablespoons fresh parsley, finely chopped (for garnish)

Optional: a splash of organic white wine for added depth

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent and fragrant, about 3-4 minutes.

    Cook the Mushrooms: Add the sliced mushrooms to the pot. Sauté them until they release their moisture and become golden brown, about 6-8 minutes. If using white wine, add it now and cook until mostly evaporated.

      Simmer the Soup: Pour in the vegetable broth and add the dried thyme. Bring to a boil, then reduce the heat to a simmer. Let it cook for about 15-20 minutes to marry the flavors.

        Blend the Soup: Using an immersion blender, blend the soup until smooth for a creamy texture. You can also ladle the soup into a countertop blender for a similar effect, then return it to the pot.

          Add Cream: Stir in the heavy cream or coconut cream, and let it heat through, making sure not to boil the mixture after adding cream. Season with salt and pepper to taste.

            Serve and Garnish: Ladle the creamy mushroom soup into bowls, and garnish with freshly chopped parsley. Enjoy hot!
