Ingredients

2 cups fresh orange juice (about 4-5 large oranges)

1 cup heavy cream

1/2 cup whole milk

1/2 cup granulated sugar

1 teaspoon vanilla extract

1 tablespoon orange zest (finely grated)

Pinch of salt

1 packet of gelatin (or 1 tablespoon agar-agar for vegan option)

1/4 cup cold water

Instructions

Prepare the Gelatin: In a small bowl, sprinkle the gelatin over the cold water and let it bloom for about 5 minutes. If using agar-agar, follow the package instructions for blooming it as well.

Juice the Oranges: While the gelatin is blooming, juice the oranges until you have 2 cups of fresh juice. Strain the juice to remove any pulp or seeds.

Mix the Cream Base: In a medium saucepan, combine the heavy cream, whole milk, sugar, vanilla extract, and a pinch of salt. Heat over medium heat, stirring occasionally until the mixture is warm and the sugar is dissolved (do not let it boil).

Combine Juices and Cream: Once the cream mixture is warm, remove it from heat. Stir in the fresh orange juice and orange zest.

Dissolve Gelatin: If you are using gelatin, add the bloomed gelatin to the warm cream mixture and stir until fully dissolved. If using agar-agar, heat the agar-agar and water mixture until boiling, stirring continuously, then add it to the cream mixture.

Chill the Mixture: Pour the entire mixture into a bowl or a large container and let it cool to room temperature. Once cool, cover it and place it in the refrigerator for at least 2-3 hours until it thickens up.

Serve: Once thickened, you can serve it by scooping it into bowls or cups. Optionally, you can garnish with extra orange zest, whipped cream, or even a fresh mint leaf for a beautiful presentation.

Prep Time: 15 min | Total Time: 3-4 hours (including chilling) | Servings: 4-6 servings
