Ingredients
  

2 salmon fillets (about 6 oz each)

1 cup orzo pasta

4 cups low-sodium chicken or vegetable broth

1 tablespoon olive oil

3 cloves garlic, minced

1 small onion, diced

Zest and juice of 1 large lemon

1 cup baby spinach

1/4 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add diced onion and sauté until translucent, about 3-4 minutes.

    Stir in the minced garlic and cook for an additional 1 minute until fragrant.

      Pour in the orzo and toast it for about 2 minutes, stirring occasionally.

        Add the broth, lemon zest, and a pinch of salt and pepper. Bring the mixture to a gentle simmer.

          Once simmering, reduce the heat to low and cook until the orzo is al dente, about 8-10 minutes. Stir occasionally to prevent sticking.

            While the orzo is cooking, season the salmon fillets with salt, pepper, and lemon juice.

              In a separate pan, sear the salmon fillets over medium-high heat for 3-4 minutes per side or until cooked through and golden brown. Remove from heat.

                Once the orzo is cooked, stir in the baby spinach and Parmesan cheese until the spinach is wilted and cheese is melted.

                  Plate the lemon orzo and carefully top each serving with a salmon fillet. Garnish with fresh parsley and an extra squeeze of lemon if desired.
