12 oz spaghetti

1 lb ground beef (or turkey)

1 medium onion, diced

3 cloves garlic, minced

1 packet taco seasoning (1 oz)

1 can (14 oz) diced tomatoes (with juices)

3 cups beef broth (or vegetable broth)

1 can (15 oz) black beans, rinsed and drained

1 cup corn (frozen or canned)

1 bell pepper, diced (any color)

1 cup shredded cheese (cheddar or Mexican blend)

Fresh cilantro, chopped (for garnish)

Sour cream (optional, for serving)

Olive oil, salt, and pepper to taste

Instructions
 

Sauté Aromatics: In a large pot over medium heat, add a drizzle of olive oil. Once hot, add the diced onion and bell pepper. Sauté for about 3-4 minutes until softened. Add the minced garlic and cook for an additional minute until fragrant.

    Brown the Meat: Push the veggies to one side of the pot and add the ground beef. Break it up with a wooden spoon and cook until browned and cooked through, about 5-6 minutes. Season with salt and pepper as it cooks.

      Add Taco Seasoning: Sprinkle the taco seasoning over the cooked meat and vegetables. Stir to coat everything evenly for about a minute.

        Combine Ingredients: Add the diced tomatoes (with their juices), black beans, corn, and beef broth to the pot. Stir in the uncooked spaghetti, making sure it’s submerged in the liquid.

          Cook the Spaghetti: Increase the heat to bring the mixture to a boil. Once boiling, reduce the heat to a simmer, cover the pot, and cook for about 10-12 minutes, stirring occasionally to prevent sticking, until the spaghetti is al dente and most of the liquid has been absorbed.
