12 oz (340g) fettuccine or spaghetti

2 large yellow onions, thinly sliced

3 tablespoons unsalted butter

1 tablespoon olive oil

4 cloves garlic, minced

4 cups low-sodium beef broth

1 cup heavy cream

1 cup grated Gruyère cheese

1 cup grated Parmesan cheese

1 teaspoon dried thyme

1 teaspoon sugar

Salt and pepper to taste

Fresh parsley, chopped, for garnish

Crusty bread, for serving (optional)

Instructions
 

Sauté the Onions: In a large pot over medium heat, add the butter and olive oil. Once melted, add the sliced onions and sugar. Cook the onions for about 10-15 minutes, stirring occasionally, until they are caramelized and golden brown.

    Add the Garlic: Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

      Combine Ingredients: Pour in the beef broth and heavy cream, stirring to combine. Add the dried thyme, salt, and pepper to taste.

        Cook the Pasta: Bring the mixture to a boil, then add the fettuccine or spaghetti. Stir well, ensuring that the pasta is submerged. Reduce the heat to a simmer and cover the pot. Cook for about 10-12 minutes, or until the pasta is al dente, stirring occasionally to prevent sticking.
