12 oz (340g) pasta (penne or fettuccine)

8 oz (225g) cremini or button mushrooms, sliced

1 medium onion, finely chopped

3 cloves garlic, minced

4 cups vegetable broth

1 cup heavy cream

1 cup grated Parmesan cheese (plus extra for serving)

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon dried basil

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté Vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 4-5 minutes. Stir in the minced garlic and sliced mushrooms, cooking until the mushrooms are softened and golden, about 5-7 minutes.

    Combine Ingredients: Add the pasta to the pot, along with the vegetable broth, heavy cream, dried thyme, and dried basil. Season with salt and pepper to taste.

      Cook Pasta: Bring the mixture to a boil, then reduce the heat to medium-low. Cover the pot and let it simmer, stirring occasionally, until the pasta is al dente and has absorbed most of the liquid, about 10-12 minutes.

        Add Cheese: Remove the pot from heat, and stir in the grated Parmesan cheese until the pasta is creamy and well-coated. Adjust seasoning with more salt and pepper if needed.

          Serve: Serve the creamy mushroom pasta hot, garnished with chopped fresh parsley and extra Parmesan cheese if desired.
