12 oz (340g) penne pasta

1 lb (450g) Italian sausage (mild or spicy)

1 medium onion, diced

3 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, undrained

4 cups chicken broth

1 cup heavy cream

2 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

1 tsp Italian seasoning

Salt and pepper to taste

2 cups fresh spinach (optional)

Fresh basil for garnish (optional)

Instructions
 

Brown the Sausage: In a large pot or Dutch oven over medium heat, add the Italian sausage. Cook until browned, breaking it into chunks with a wooden spoon, about 5-7 minutes. Drain excess fat if necessary.

    Add Aromatics: Stir in the diced onion and minced garlic. Sauté for about 2-3 minutes until the onion becomes translucent and fragrant.

      Combine Ingredients: Pour in the canned diced tomatoes (with their juice), chicken broth, heavy cream, Italian seasoning, and uncooked penne pasta. Stir well to combine all ingredients.

        Simmer: Bring the mixture to a boil, then reduce heat to low. Cover and simmer for about 12-15 minutes, stirring occasionally, until the pasta is al dente and most of the liquid is absorbed.

          Cheesy Goodness: Reduce the heat to low, and stir in the shredded mozzarella and grated Parmesan cheese until melted and creamy. If using spinach, add it now and stir until wilted.

            Seasoning: Season with salt and pepper to taste.

              Serve: Garnish with fresh basil if desired. Serve hot and enjoy your delicious, cheesy one pot pasta!
