1 cup orzo pasta

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

3 cloves garlic, minced

1 small onion, finely chopped

1 cup cherry tomatoes, halved

3 cups vegetable broth

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper, to taste

1 cup fresh spinach

Fresh parsley, for garnish

Instructions
 

Heat Oil: In a large skillet over medium heat, add the olive oil. Once hot, add the chopped onion and sauté until translucent, about 2-3 minutes.

    Sauté Garlic: Add the minced garlic to the skillet and cook for an additional 30 seconds, stirring continuously to prevent burning.

      Add Shrimp: Toss in the shrimp, season with salt and pepper, and cook until they turn pink, about 3-4 minutes. Remove shrimp from the skillet and set them aside.

        Cook Orzo: In the same skillet, add the orzo pasta and stir it around for 1-2 minutes to lightly toast. This adds a nice flavor to the dish.

          Add Broth & Tomatoes: Pour in the vegetable broth, add the halved cherry tomatoes, and sprinkle Italian seasoning. Stir well and bring to a simmer.

            Simmer: Reduce the heat to low and cover the skillet. Allow the orzo to cook for about 12-15 minutes, or until the liquid is absorbed and the orzo is tender, stirring occasionally.

              Add Spinach: Once the orzo is cooked, stir in the fresh spinach and allow it to wilt for about 1-2 minutes.

                Combine Ingredients: Gently fold the cooked shrimp back into the skillet. Add the grated Parmesan cheese and mix until everything is combined and creamy. Adjust seasoning with more salt and pepper if needed.
