Ingredients

4 boneless, skinless chicken thighs

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and black pepper to taste

2 cups chicken broth

8 ounces egg noodles

4 tablespoons unsalted butter

1 cup green peas (fresh or frozen)

½ cup grated Parmesan cheese

Fresh parsley, chopped (for garnishing)

Instructions

Season the Chicken: Pat the chicken thighs dry with paper towels. In a small bowl, mix garlic powder, onion powder, smoked paprika, salt, and pepper. Rub the seasoning mixture evenly over the chicken.

Sear the Chicken: In a large skillet or pan, heat the olive oil over medium-high heat. Add the chicken thighs and cook for about 5-7 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F / 74°C). Remove from the pan and set aside.

Cook the Noodles: In the same pan, add the chicken broth and bring to a simmer. Add the egg noodles and follow the package instructions, usually around 7-8 minutes, until they are al dente. Stir occasionally to prevent sticking.

Combine and Flavor: Once the noodles are cooked, reduce the heat to low. Stir in the butter until melted and combined. Add the green peas and return the chicken thighs to the pan. Cook for an additional 2-3 minutes until the peas are heated through.

Finish the Dish: Sprinkle the grated Parmesan cheese over the noodle mixture and stir to combine everything. Adjust seasoning with salt and pepper if needed.

Serve: Plate the buttery noodles and chicken together, garnishing with freshly chopped parsley for a pop of color.
