4 boneless, skinless chicken thighs

8 oz egg noodles

2 tablespoons olive oil

4 tablespoons unsalted butter

3 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper, to taste

2 cups chicken broth

1 cup fresh spinach

1 cup cherry tomatoes, halved

1/4 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Sear the Chicken: In a large skillet or pan, heat the olive oil over medium-high heat. Season the chicken thighs with salt, pepper, onion powder, and smoked paprika. Once the oil is hot, add the chicken thighs and sear for about 5-7 minutes on each side until golden brown. Remove the chicken from the pan and set aside.

    Cook the Noodles: In the same pan, add the chicken broth and bring it to a simmer. Stir in the egg noodles and cook for 8-10 minutes or until al dente, stirring occasionally. If the liquid evaporates too quickly, add a bit more broth or water.

      Add Flavor: While the noodles are cooking, add the minced garlic and cook for about 1 minute until fragrant. Stir in the cherry tomatoes and cook for an additional 2-3 minutes until they soften.

        Combine & Finish: Once the noodles are cooked, add the butter and fresh spinach to the pan, stirring until the butter has melted and the spinach has wilted. Return the seared chicken thighs to the pan and simmer for another 3-4 minutes to heat them through.

          Serve: Sprinkle the dish with grated Parmesan cheese and chopped parsley for garnish. Serve directly from the pan for a rustic presentation, and enjoy your delightful one-pan meal!
