Ingredients

4 cups all-purpose flour

1 packet (2 1/4 tsp) instant yeast

1/2 cup granulated sugar

1 teaspoon salt

1 teaspoon ground cinnamon

1/4 cup melted butter (plus more for greasing)

1 cup warm milk (110°F/43°C)

2 large eggs

1/2 cup packed brown sugar

2 tablespoons ground cinnamon (for filling)

1/4 cup raisin or chopped nuts (optional)

1 cup powdered sugar (for icing)

2 tablespoons milk (for icing)

1 teaspoon vanilla extract (for icing)

Instructions

Prepare the Dough: In a large mixing bowl, combine the flour, instant yeast, granulated sugar, salt, and 1 teaspoon of cinnamon. Mix well.

Combine Wet Ingredients: In a separate bowl, whisk together the warm milk, melted butter, and eggs.

Mix Together: Pour the wet ingredients into the dry ingredients and stir until a dough begins to form. If the mixture is too sticky, add a little more flour, one tablespoon at a time.

Knead the Dough: Turn the dough onto a lightly floured surface and knead for about 5-7 minutes until the dough is smooth and elastic.

Let it Rise: Lightly grease a large bowl with butter and place the dough inside. Cover with a damp cloth or plastic wrap and let it rise in a warm place for 30 minutes, or until it doubles in size.

Prepare the Filling: In a small bowl, mix the brown sugar and 2 tablespoons of cinnamon together.

Roll the Dough: After the dough has risen, punch it down gently and roll it out on a floured surface into a rectangle about 1/4 inch thick. Brush melted butter over the dough. Evenly sprinkle the cinnamon-sugar mixture over the dough. Add raisins or nuts if desired.

Shape the Rolls: Starting from one long edge, tightly roll the dough into a log. Slice the log into 12 equal pieces and place them cut-side up in a greased 9x13 inch baking dish.

Second Rise: Cover the baking dish with a cloth and let the rolls rise for another 15 minutes while you preheat the oven to 375°F (190°C).

Bake: Bake the cinnamon rolls for about 20-25 minutes, or until golden brown.

Make the Icing: While the rolls bake, whisk together the powdered sugar, milk, and vanilla extract in a small bowl until smooth.

Glaze the Rolls: Once baked, allow the rolls to cool for a few minutes before drizzling the icing over the top.
