2 boneless ribeye steaks (about 8 oz each)

Salt and black pepper, to taste

1 tablespoon olive oil

1 tablespoon unsalted butter

2 cloves garlic, minced

1/2 cup heavy cream

3/4 cup crumbled Gorgonzola cheese

1 tablespoon chopped fresh parsley (for garnish)

1 teaspoon balsamic vinegar

Fresh arugula or mixed greens (optional, for serving)

Instructions
 

Prepare the Steaks: Take the ribeye steaks out of the refrigerator about 30 minutes before cooking to bring them to room temperature. Season both sides generously with salt and black pepper.

    Sear the Steaks: In a large skillet over medium-high heat, add the olive oil. Once the oil is hot, add the ribeye steaks and sear for about 4-5 minutes on each side, achieving a nice crust. For medium-rare, the internal temperature should reach 130°F (54°C). Adjust cooking time according to your preferred doneness.

      Remove and Rest: Transfer the steaks to a plate, cover loosely with foil, and let them rest while you prepare the sauce.

        Make the Gorgonzola Sauce: In the same skillet, reduce the heat to medium and add the butter. Once melted, add the minced garlic and sauté for about 1 minute, until fragrant but not browned.

          Add Cream and Cheese: Pour in the heavy cream and stir, letting it simmer gently for 2-3 minutes. Gradually add the crumbled Gorgonzola cheese, stirring continuously until the cheese has melted and the sauce is smooth. Stir in the balsamic vinegar and cook for another minute. Season with additional salt and pepper, to taste.

            Serve: Slice the rested ribeye steaks against the grain and arrange them on plates. Spoon the creamy Gorgonzola sauce over the steak and garnish with fresh parsley. If desired, serve on a bed of arugula or mixed greens.
