Goulash has a rich history that dates back to the 9th century, when Hungarian shepherds cooked a simple stew of meat and vegetables in a cauldron over an open fire. The dish was originally made with beef, but as it traveled through various regions, different proteins and ingredients were incorporated, reflecting local tastes and resources. The use of paprika became synonymous with goulash, providing that distinctive flavor and vibrant color that has made this dish a staple in many households.

Ingredients

1 lb ground beef

1 medium onion, diced

2 cloves garlic, minced

1 red bell pepper, diced

1 (15 oz) can diced tomatoes

1 (15 oz) can tomato sauce

2 cups elbow macaroni

2 cups beef broth

1 teaspoon paprika

1 teaspoon Italian seasoning

Salt and pepper to taste

1 cup shredded cheddar cheese (optional)

Fresh parsley for garnish (optional)

Instructions

In a large skillet, brown the ground beef over medium heat until fully cooked. Drain any excess fat.

Add the diced onion and minced garlic to the skillet. Sauté for about 3-5 minutes until the onion is translucent.

Stir in the bell pepper and cook for an additional 2 minutes.

Add the diced tomatoes, tomato sauce, beef broth, paprika, Italian seasoning, salt, and pepper. Stir until combined.

Bring the mixture to a boil, then reduce the heat to a simmer.

Add the elbow macaroni and stir well. Cover and let it simmer for about 15-20 minutes, or until the macaroni is cooked al dente, stirring occasionally.

If desired, stir in the shredded cheddar cheese just before serving until melted and creamy.

Garnish with fresh parsley before serving for a touch of color and freshness.
