1 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon salt

3 cups old-fashioned rolled oats

1 1/2 cups raisins

1/2 cup chopped nuts (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish or line it with parchment paper for easy removal.

    In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 3-4 minutes.

      Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.

        In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.

          Gradually add the dry ingredients to the wet mixture, mixing until just combined.

            Stir in the rolled oats, raisins, and nuts (if using) until evenly distributed throughout the dough.

              Spread the mixture evenly into the prepared baking dish, smoothing the top with a spatula.

                Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.

                  Once baked, remove from the oven and let cool in the pan for about 15-20 minutes before transferring to a wire rack to cool completely.
