1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

1 cup powdered sugar

8 oz cream cheese, softened

1 tsp vanilla extract

1 cup heavy whipping cream

1 cup crushed pineapple, drained

½ cup sweetened coconut flakes

Pineapple slices and cherries for garnish (optional)

Instructions
 

Prepare the Crust: In a mixing bowl, combine graham cracker crumbs and melted butter. Stir until evenly coated. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Chill in the refrigerator for 15-20 minutes.

    Make the Filling: In a separate large bowl, beat the softened cream cheese until smooth. Gradually add in the powdered sugar and vanilla extract, mixing until fully combined.

      Whip the Cream: In another bowl, whip the heavy cream until medium peaks form. Gently fold the whipped cream into the cream cheese mixture until well incorporated.

        Add Pineapple and Coconut: Carefully fold in the drained crushed pineapple and sweetened coconut flakes into the cream cheese mixture until just combined.
