Ingredients
  

1 can (20 oz) crushed pineapple, drained

1 cup heavy whipping cream

8 oz cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup crushed graham crackers

1/2 cup unsweetened shredded coconut

1/2 cup chopped pecans (optional)

Fresh pineapple chunks and mint leaves for garnish

Instructions
 

In a medium bowl, combine the softened cream cheese and powdered sugar. Beat with an electric mixer until smooth and creamy.

    Add the vanilla extract and mix briefly until combined.

      In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.

        Stir in the drained crushed pineapple, shredded coconut, and chopped pecans (if using) until evenly distributed.

          In a 9x9-inch serving dish or a similar size, layer half of the crushed graham crackers at the bottom.

            Spread half of the pineapple cream mixture over the layer of graham crackers. Repeat the layers with the remaining graham crackers and the remaining cream mixture.

              Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight for best results. This allows the flavors to meld and the dessert to set.

                Before serving, garnish with fresh pineapple chunks and mint leaves for a tropical touch.
