1 ½ cups crushed graham crackers

½ cup unsalted butter, melted

14 oz. sweetened condensed milk

½ cup freshly squeezed lemon juice (about 3-4 lemons)

Zest of 2 lemons

1 cup heavy whipping cream

¼ cup powdered sugar

1 tsp vanilla extract

Optional: Lemon slices and mint leaves for garnish

Make the Crust: In a medium bowl, combine the crushed graham crackers and melted butter. Stir until the mixture resembles wet sand. Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish to form an even crust. Place the crust in the refrigerator to chill while you make the filling.

    Prepare the Filling: In a separate bowl, whisk together the sweetened condensed milk, lemon juice, and lemon zest until well combined. The mixture will thicken slightly.

      Whip the Cream: In another mixing bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form. This should take about 3-4 minutes with an electric mixer on high speed.
