Ingredients

1 ½ cups graham cracker crumbs

⅓ cup granulated sugar

½ cup unsalted butter, melted

16 oz cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream, cold

2 tablespoons lemon juice

1 cup fruit topping (e.g., cherry or blueberry)

Instructions

In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Stir until the mixture resembles wet sand.

Press the crumb mixture firmly into the bottom of a 9-inch springform pan to create a crust. Use the back of a measuring cup for an even surface. Chill the crust in the refrigerator while preparing the filling.

In a large mixing bowl, beat the softened cream cheese until smooth and creamy, about 2-3 minutes.

Gradually add the powdered sugar and vanilla extract, mixing continuously until fully incorporated.

In a separate bowl, whip the heavy cream until stiff peaks form.

Gently fold the whipped cream into the cream cheese mixture. Be careful not to deflate the whipped cream.

Add the lemon juice and fold it into the mixture until combined.

Pour the filling over the prepared crust and spread it evenly with a spatula.

Cover the cheesecake with plastic wrap and refrigerate for at least 4 hours, or preferably overnight to let it set properly.

Once set, carefully remove the sides of the springform pan.

Spoon your choice of fruit topping over the cheesecake before serving.

Prep Time: 20 minutes | Total Time: 4 hours 20 minutes (plus chilling) | Servings: 8

                          - Presentation Tips: Slice the cheesecake into wedges and top each slice with a generous spoonful of fruit topping. Garnish with fresh mint leaves for a pop of color.
